This Spinach and Turkey Lasagna is a healthier twist on the classic Italian dish, featuring lean ground turkey, nutrient-packed spinach, creamy ricotta, and layers of melted cheese. Perfect for family dinners or meal prep, this comforting yet lighter lasagna is rich in flavor and easy to make!

Ingredients

  • 12 whole wheat lasagna noodles
  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 (28-oz) can crushed tomatoes
  • 1 (15-oz) can tomato sauce
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 (10-oz) package frozen chopped spinach, thawed & drained
  • 1 (15-oz) container ricotta cheese
  • 1 egg
  • ½ cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

Cook the Noodles: Boil lasagna noodles according to package instructions. Drain and set aside.

2️⃣ Prepare the Sauce: Heat olive oil in a skillet over medium heat. Add onion and cook until soft. Stir in garlic and turkey, cooking until browned. Drain excess fat.

3️⃣ Simmer the Sauce: Add crushed tomatoes, tomato sauce, tomato paste, basil, oregano, salt, and pepper. Stir well and simmer for 15-20 minutes.

4️⃣ Prepare Ricotta Mixture: In a bowl, mix ricotta cheese, egg, drained spinach, and Parmesan cheese.

5️⃣ Assemble the Lasagna:

  • Spread a thin layer of meat sauce in a greased 9×13-inch baking dish.
  • Layer 4 lasagna noodles, half of the ricotta mixture, more sauce, and some mozzarella.
  • Repeat layers, finishing with noodles, sauce, and mozzarella on top.

6️⃣ Bake: Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake for another 10-15 minutes until bubbly and golden.

7️⃣ Serve: Let lasagna rest for 10 minutes before slicing. Enjoy!
