Ingredients

  • 4 ripe bananas, sliced
  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup dark rum (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 1 egg

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9-inch baking dish with 1 tablespoon of butter.
  • In a medium bowl, combine sliced bananas, melted butter, brown sugar, rum (if using), vanilla extract, and cinnamon. Stir to coat the bananas in the caramel sauce and set aside.
  • In a separate bowl, whisk together the flour, baking powder, salt, and granulated sugar.
  • Add milk, egg, and vanilla extract to the dry ingredients, stirring until just combined—be careful not to overmix.
  • Pour the banana mixture into the prepared baking dish and spread it evenly.
  • Spoon the cobbler batter over the bananas and spread gently to cover.
  • Bake for 30-35 minutes, until the cobbler topping is golden brown and a toothpick inserted into the center comes out clean.
