Ingredients

  • 1 tablespoon butter
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 4 cups chicken or vegetable broth
  • 4 cups broccoli florets
  • 2 cups shredded cheddar cheese (sharp for best flavor)
  • 1 cup heavy cream
  • Salt and black pepper, to taste

Instructions

Sauté Aromatics:

  • In a large pot over medium heat, melt the butter.
  • Add the chopped onion and garlic; sauté until the onion becomes soft and translucent (about 5 minutes).

2. Cook the Broccoli:

  • Pour in the broth, then add the broccoli florets.
  • Bring to a simmer and cook until the broccoli is tender (about 15–20 minutes).

3. Blend the Soup:

  • Use an immersion blender to purée the soup until smooth.
  • If using a regular blender, work in batches and blend carefully.
