Ingredients

  • 3 cups shredded cabbage
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup milk or water
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon baking powder
  • 2 tablespoons chopped green onions or parsley
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Parmesan, optional)
  • 2 tablespoons oil (for frying)

Instructions

  • Prepare the Cabbage: Shred cabbage finely. If it’s too watery, pat dry with a paper towel.
  • Make the Batter: In a large bowl, whisk together eggs, flour, milk, salt, pepper, garlic powder, onion powder, smoked paprika, and baking powder until smooth.
  • Combine Ingredients: Add shredded cabbage, green onions, and cheese (if using). Mix well to coat the cabbage evenly.
  • Heat the Oil: In a large skillet, heat 1 tablespoon oil over medium heat.
  • Cook the Fritters: Scoop about 1/4 cup batter into the pan, flatten slightly, and cook 3-4 minutes per side until golden brown and crispy. Repeat with the remaining batter.
  • Serve: Drain on a paper towel and serve warm with sour cream, yogurt, or your favorite dipping sauce.

Notes

  • For extra crispy fritters, fry in a well-heated pan and avoid overcrowding.
  • Use almond flour for a gluten-free version or a flax egg for an egg-free option.
  • Pre-shredded coleslaw mix works great for convenience!
