Ingredients

  • 4 cups shredded cooked chicken (about 3 large breasts)
  • 2 cups instant rice (or pre-cooked rice)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 (10 oz) can diced tomatoes with chilies (e.g., Ro*Tel), undrained
  • 1½ cups chicken broth
  • 1 (1.12 oz) packet fajita seasoning
  • 8 oz shredded Mexican blend cheese (about 2 cups)

Instructions

Preheat the Oven:

  • Set oven to 350°F (175°C).
  • Lightly grease a 9×13-inch baking dish.

2. Mix the Casserole Ingredients:

  • In a large bowl, combine:
    • Shredded chicken
    • Uncooked instant rice
    • Cream of chicken soup
    • Sour cream
    • Frozen onion & bell pepper mix
    • Diced tomatoes with chilies (undrained)
    • Chicken broth
    • Fajita seasoning
    • Half of the shredded cheese
  • Stir until well mixed.

3. Assemble & Bake:

  • Pour the mixture into the greased baking dish and spread evenly.
  • Cover with foil and bake for 25 minutes.

4. Add Cheese & Final Bake:

  • Remove from oven and sprinkle the remaining cheese on top.
  • Return to oven uncovered and bake for 5–7 more minutes, until cheese is melted and bubbly.

5. Serve & Enjoy:

  • Let the casserole cool slightly before serving.
  • Garnish with fresh cilantro, jalapeños, or avocado slices.
