For the Ramen:
2 chicken breasts, boneless and skinless
4 cups chicken broth
2 tablespoons soy sauce
2 tablespoons sriracha sauce (or more for extra heat)
1 tablespoon chili paste or gochujang (Korean chili paste)
2 teaspoons sesame oil
3 garlic cloves, minced
1-inch piece of ginger, grated
1 tablespoon rice vinegar
2 teaspoons honey
2 packs ramen noodles (discard the seasoning packet)
For the Creamy Garlic Sauce:
1/2 cup heavy cream
1/4 cup cream cheese, softened
2 tablespoons butter
For Garnish:
2 green onions, sliced
1 tablespoon sesame seeds
In a large pot, heat sesame oil over medium heat. Add chicken breasts and cook for 6-7 minutes per side until golden and cooked through. Remove chicken and set aside to rest.
In the same pot, add minced garlic and grated ginger, sauté for about 1 minute until fragrant.
Pour in chicken broth, soy sauce, sriracha, chili paste, rice vinegar, and honey. Stir to combine and bring to a simmer. Let it simmer for 10 minutes.
While the broth is simmering, cook ramen noodles according to package instructions. Drain and set aside.
Shred the cooked chicken using two forks.
In a small saucepan, melt butter over medium heat. Add heavy cream and cream cheese, stirring until smooth and creamy. Remove from heat.
Add shredded chicken to the simmering broth and cook for 3-4 more minutes.
To serve, divide the cooked ramen noodles into bowls. Pour the fiery chicken broth and chicken mixture over the noodles.
Drizzle with the creamy garlic sauce, and garnish with sliced green onions, sesame seeds, and cilantro (optional).
Serve hot and enjoy!
Add extra sriracha or crushed red pepper flakes for more heat.
Add vegetables like spinach, bok choy, or mushrooms for extra texture and flavor.
For an alternative protein, swap chicken for shrimp or tofu.
