Fish in Foil is a simple, healthy, and mess-free way to cook tender, juicy fish packed with flavor. Ingredients

  • 4 fish fillets (salmon, tilapia, cod, or your choice)
  • 2 tablespoons olive oil or melted butter
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried Italian seasoning (or fresh herbs like parsley, dill, or thyme)
  • 1 cup cherry tomatoes, halved (optional)
  • 1 small zucchini, sliced (optional)

Instructions

  • Prepare the Foil Packets:

    • Preheat oven to 375°F (190°C) or preheat the grill to medium-high heat.
    • Cut 4 large pieces of aluminum foil, big enough to fold over the fish and seal tightly.
  • Assemble the Packets:

    • Place a fish fillet in the center of each piece of foil.
    • Drizzle with olive oil or melted butter and season with garlic, salt, pepper, and Italian seasoning.
    • Top with lemon slices and scatter cherry tomatoes and zucchini around the fillet (if using).
  • Seal the Packets:

    • Fold the foil over the fish, sealing the edges tightly to trap steam.
  • Cook the Fish:

    • Oven Method: Bake the foil packets on a baking sheet for 15-20 minutes.
    • Grill Method: Grill for 10-12 minutes, flipping halfway through.
  • Serve & Enjoy:
