Ingredients

For the Cake:

  • 4 large eggs (room temperature)

  • 1 cup (200g) granulated sugar

  • 1 teaspoon vanilla extract

  • 1 cup (120g) all-purpose flour (sifted)

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 cup (60g) unsalted butter (melted, optional)

  • Powdered sugar (for dusting, optional)

Instructions

  • Prepare the Oven and Pan:

    • Preheat your oven to 350°F (175°C).

    • Grease and line an 8-inch round cake pan with parchment paper, greasing the sides to prevent sticking.

  • Mix the Batter:

    • Beat the eggs and granulated sugar in a large bowl for 5–8 minutes until light, fluffy, and pale in color.

    • Stir in the vanilla extract.

    • Sift the flour, baking powder, and salt together in a separate bowl.

    • Gently fold the dry ingredients into the egg mixture in batches, using a spatula to maintain the airiness.

    • Optionally, fold in melted butter for a richer texture.

  • Bake the Cake:

    • Pour the batter into the prepared pan and smooth the top.

    • Bake for 20–25 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.

  • Cool and Serve:

    • Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.

    • Once cooled, dust with powdered sugar if desired.
