Fluffy Cottage Cheese Cloud Bread is a light, airy, and protein-packed alternative to traditional bread. Naturally gluten-free and low-carb, this easy-to-make bread is perfect for sandwiches, snacks, or as a base for mini pizzas.

 

Ingredients

  • 3 large eggs, separated
  • ½ cup cottage cheese, blended until smooth
  • ¼ teaspoon cream of tartar
  • ½ teaspoon salt
  • 1 tablespoon cornstarch or arrowroot powder (optional, for structure)
  • 1 teaspoon honey or a pinch of sweetener (optional)

Instructions

  • Preheat & Prepare:
    • Preheat oven to 300°F (150°C).
    • Line a baking sheet with parchment paper.
  • Whip the Egg Whites:
    • In a clean bowl, add egg whites and cream of tartar.
    • Beat with an electric mixer until stiff peaks form.
  • Mix Yolks & Cottage Cheese:
    • In a separate bowl, mix egg yolks, blended cottage cheese, salt, cornstarch (if using), and honey/sweetener.
    • Stir until smooth.
  • Fold the Mixtures:
    • Gently fold the whipped egg whites into the yolk mixture in thirds, keeping as much air as possible for a fluffy texture.
  • Shape & Bake:
    • Scoop the mixture onto the lined baking sheet, forming 6-8 rounds.
    • Bake for 25-30 minutes or until golden brown.
    • Let cool completely before serving.
