Ingredients

For the Cake Base:

  • 2 ½ cups all-purpose flour

  • ¾ cup unsalted butter, softened
  • 4 large eggs

For the Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup crushed pineapple (well-drained)
  • 1 teaspoon coconut extract (optional)
  • A splash of heavy cream (for consistency)

For Garnishing:

  • Fresh pineapple slices
  • Toasted coconut flakes
  • Maraschino cherries

Instructions

  • Preparing the Cake Batter:
    Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    Cream the butter, granulated sugar, and brown sugar together until light and fluffy (about 3-4 minutes).
    Beat in the eggs one at a time, followed by the vanilla extract, until well combined.
    Add the crushed pineapple with juice and mix well.
    Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
  • Baking the Cake:
    Divide the batter evenly between the two prepared pans and smooth the tops with a spatula.
    Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  • Making the Pineapple Frosting:
    Beat the softened butter until creamy.
    Gradually add powdered sugar, one cup at a time, mixing until smooth and fluffy.
    Fold in the drained crushed pineapple and coconut extract (if using). Adjust the consistency with a splash of heavy cream if needed.
  • Assembling the Pineapple Heaven Cake:
    If necessary, level the cake layers with a serrated knife.
    Place one layer of cake on a serving plate and spread frosting generously over it.
    Add the second cake layer and frost the entire cake.
    Garnish with fresh pineapple slices, toasted coconut flakes, and maraschino cherries for a tropical touch.
