This quick and easy Fried Rice recipe is the perfect dish for busy weeknights or using up leftovers. With a savory combination of garlic, soy sauce, and sesame oil, plus customizable veggies and proteins, this flavorful dish can be made in under 20 minutes. Ideal as a side dish or a complete meal, it’s packed with umami and perfect for any occasion.

Ingredients

  • 2 cups cooked rice (preferably day-old rice for better texture)
  • 2 tablespoons vegetable oil (or sesame oil for extra flavor)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 medium carrot, diced
  • ½ cup frozen peas (or any other vegetables of your choice)
  • 2 large eggs, beaten
  • 23 tablespoons soy sauce (adjust to taste)
  • 1 tablespoon oyster sauce (optional for extra umami)
  • 1 teaspoon sesame oil (optional, for extra flavor)
  • 2 green onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  • Prepare the rice: If using leftover rice, break up any clumps and ensure it’s separated. Fresh rice should be cooled before using for fried rice.
  • Cook the vegetables: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add garlic and onion, sautéing for 1-2 minutes until fragrant.
  • Add the carrot and peas: Stir in the diced carrots and frozen peas, stir-frying for 3-4 minutes, until the vegetables are tender.
  • Scramble the eggs: Push the vegetables to the side of the pan, add the remaining tablespoon of oil, and pour in the beaten eggs. Scramble until just set, then mix with the vegetables.
  • Add the rice: Add the cooked rice, breaking up any clumps. Stir everything together to coat the rice with oil and cook it through.
  • Season the fried rice: Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to distribute the flavors evenly. Taste and adjust with salt, pepper, or more soy sauce as needed.
  • Finish and serve: Garnish with chopped green onions and serve hot. Enjoy!

Notes

  • You can substitute fresh veggies for frozen if you prefer. Just cook fresh veggies until tender before adding the rice.
