This Fruit Salad Cheesecake is a delightful no-bake dessert that combines creamy cheesecake with a medley of refreshing fruits, all set on a buttery vanilla wafer crust. With flavors of pineapple, grapes, mandarin oranges, cherries, and pecans, it’s the perfect make-ahead treat for summer gatherings, potlucks, and celebrations.

Ingredients

For the Crust:

  • 1 ½ cups vanilla wafer crumbs
  • 2 tbsp butter, melted

For the Filling:

  • 1 (20 oz) can crushed pineapple, drained
  • ¾ cup granulated sugar
  • ½ cup cold water
  • 2 envelopes unflavored gelatin
  • 1 (8 oz) package cream cheese, cubed
  • 1 ½ cups seedless grapes, halved
  • 1 (11 oz) can mandarin oranges, drained and halved
  • 1 (10 oz) jar maraschino cherries, drained and roughly chopped
  • ½ cup finely chopped pecans
  • 2 cups whipped topping

Instructions

Prepare the Crust:

  1. In a bowl, mix vanilla wafer crumbs with melted butter until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. Set aside while preparing the filling.

2. Make the Filling:

  1. In a saucepan over medium heat, cook the drained crushed pineapple with sugar until the sugar dissolves.
  2. In a separate bowl, dissolve gelatin in cold water, then add it to the pineapple mixture.
  3. Reduce heat and stir in the cubed cream cheese until smooth.
  4. Remove from heat and allow to cool slightly.
  5. Gently fold in grapes, mandarin oranges, cherries, and pecans.
  6. Fold in whipped topping until light and fluffy.

3. Assemble & Chill:

  1. Pour the cheesecake mixture over the prepared crust, spreading evenly.
  2. Cover and refrigerate overnight to allow it to set.

4. Serve:

  1. Carefully remove the cheesecake from the springform pan.
  2. Slice and serve chilled, optionally garnished with extra fruit or whipped topping.

  • Extra Creamy Texture: Replace half of the whipped topping with heavy cream.
