Garlic Butter Chicken Bites with Creamy Parmesan Pasta is a quick and delicious dish featuring crispy chicken bites in a rich garlic butter sauce paired with velvety Parmesan-coated pasta. Perfect for weeknight dinners or special occasions, this meal is ready in just 30 minutes.

 

Ingredients

For the Chicken Bites:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and freshly ground black pepper, to taste
  • 1 tsp paprika (optional)
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced

For the Creamy Parmesan Pasta:

  • 8 oz penne or fusilli pasta
  • 2 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  • Cook the Pasta:
    • Boil the pasta in salted water according to package instructions until al dente. Drain and set aside.
  • Prepare the Chicken Bites:
    • Season chicken pieces with salt, pepper, and paprika (if using).
    • Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook for 3–4 minutes on each side until golden and fully cooked.
    • Remove chicken from the skillet and set aside.
  • Make the Garlic Butter Sauce:
    • Reduce heat to medium in the same skillet. Add 2 tbsp of butter and let it melt.
    • Add minced garlic and sauté for 1 minute until fragrant.
    • Return chicken to the skillet, tossing it in the garlic butter sauce to coat evenly. Simmer for 2–3 minutes. Remove from heat.
  • Prepare the Creamy Parmesan Sauce:
    • In a separate saucepan, melt 2 tbsp of butter over medium heat.
    • Add heavy cream and bring to a gentle simmer, stirring occasionally.
    • Gradually whisk in Parmesan cheese until smooth and creamy. Season with salt and pepper to taste.
  • Combine and Serve:
    • Toss the cooked pasta in the creamy Parmesan sauce until well-coated.
    • Serve pasta topped with garlic butter chicken bites. Garnish with fresh parsley or basil if desired.

Notes

  • Add sautéed spinach, mushrooms, or sun-dried tomatoes for extra flavor and nutrients.
  • For a lighter dish, substitute half-and-half for heavy cream and reduce the butter.
  • Make it spicy by adding red pepper flakes or hot sauce to the garlic butter sauce
