Ingredients

  • 2 cups cooked chicken (shredded or cubed)
  • 8 oz penne pasta (or any pasta of your choice)
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 ½ cups grated Parmesan cheese
  • 1 ½ cups shredded mozzarella cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 tbsp olive oil (for greasing the baking dish)

Instructions

  • Preheat the Oven: Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.
  • Cook the Pasta: Cook pasta in salted boiling water according to package instructions until al dente (about 8-10 minutes). Drain and set aside.
  • Make the Garlic Parmesan Sauce: In a large skillet, melt butter over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.
  • Add Cream and Broth: Stir in heavy cream and chicken broth. Simmer for 3-4 minutes, stirring occasionally.
  • Add the Cheese and Seasonings: Stir in grated Parmesan and shredded mozzarella cheeses. Add garlic powder, onion powder, salt, and pepper. Stir until the cheese melts and the sauce becomes smooth.
  • Combine with Chicken and Pasta: Add cooked chicken and pasta to the sauce. Stir until well coated, then transfer the mixture to the prepared baking dish.
  • Bake: Top with additional mozzarella and Parmesan cheese, if desired. Cover with foil and bake for 20 minutes. Remove the foil and bake for another 5-10 minutes, or until the cheese is golden and bubbly.
  • Serve: Let the casserole sit for a couple of minutes before serving. Garnish with fresh chopped parsley and enjoy!
