Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • ¾ cup warm water (about 110°F/45°C)
  • 2 tablespoons olive oil, plus extra for greasing
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese (optional)
  • Sea salt, for sprinkling on top

Instructions

  • Activate the Yeast:

    • In a small bowl, combine warm water and sugar. Sprinkle the active dry yeast over the water and let it sit for 5-10 minutes until it becomes frothy.
  • Make the Dough:

    • In a large mixing bowl, combine flour and salt. Add the frothy yeast mixture, 2 tablespoons of olive oil, and chopped rosemary. Mix until a dough forms, then knead for about 5-7 minutes until smooth and elastic.
  • First Rise:

    • Coat the dough with a bit of olive oil, cover the bowl with a clean towel, and let it rise in a warm place for about 30 minutes, or until it doubles in size.
  • Prepare the Muffin Tin:

    • Preheat the oven to 375°F (190°C). Grease a muffin tin with olive oil.
  • Shape the Muffins:

    • Punch down the dough and divide it into 12 equal portions. Roll each portion into a ball and place it in the muffin tin.
  • Add Garlic and Rosemary:

    • In a small bowl, mix minced garlic and 1 tablespoon of olive oil. Brush the mixture over the tops of each muffin, then sprinkle with grated Parmesan cheese (if using) and a pinch of sea salt.
  • Bake:

    • Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the muffins are golden brown and the tops are slightly crispy.
  • Serve:

    • Allow the muffins to cool for a few minutes before removing them from the tin. Serve warm, garnished with extra fresh rosemary if desired.

Notes

  • Cheese Variation: Add cubed mozzarella or any cheese of your choice into the dough for an extra cheesy bite.
  • Herb Variation: Try thyme, oregano, or basil for a different herbal twist.
  • Vegan Option: Replace Parmesan with nutritional yeast and use plant-based oil for a vegan-friendly version.
