Ingredients

  • 1 lb (450g) beef fillet or sirloin, thinly sliced
  • 2 tablespoons olive oil

  • 1/2 cup (120ml) white wine (optional, can be substituted with beef broth)

  • 1 cup (240ml) beef broth

  • 1 tablespoon Dijon mustard

  • 1 cup (240ml) sour cream

  • 1 tablespoon Worcestershire sauce

  • 1/2 teaspoon paprika

  • Salt and black pepper, to taste

  • 1 tablespoon butter

  • 1 tablespoon fresh parsley, chopped (for garnish)

  • Egg noodles, rice, or mashed potatoes (for serving)

Instructions

  • Prepare the Beef: Season the beef with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches for 1-2 minutes until browned. Remove and set aside.

  • Sauté Onion and Garlic: In the same pan, melt the butter. Sauté the chopped onion for 3-4 minutes until softened. Add minced garlic and cook for another minute.

  • Deglaze the Pan: Pour in the white wine (or beef broth) and scrape up any browned bits. Let the wine reduce for 2-3 minutes.

  • Make the Sauce: Add beef broth, Dijon mustard, Worcestershire sauce, and paprika. Stir to combine and simmer for 3-4 minutes to thicken.

  • Finish the Sauce: Lower heat and stir in sour cream, mixing until smooth. Adjust seasoning with salt and pepper.

  • Return the Beef: Add the seared beef back into the sauce, mixing to coat. Let the beef heat through for 2-3 minutes.

  • Serve: Serve the Beef Stroganoff over egg noodles, rice, or mashed potatoes. Garnish with chopped parsley.
