Gözleme is a traditional Turkish flatbread filled with spinach and feta, then cooked to perfection on a griddle. Ingredients

For the Dough:

  • 3 1/3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup lukewarm water
  • 3 tablespoons olive oil

For the Filling:

  • 4 cups packed baby spinach, chopped
  • 1 medium yellow onion, finely chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon Aleppo pepper (or red pepper flakes)
  • Salt and black pepper to taste
  • 1/2 cup feta cheese, crumbled

Instructions

  • Prepare the Dough: Sift flour into a bowl, add salt, and make a well in the center. Add water and olive oil, then mix until a dough forms. Knead for 3 minutes on a floured surface. Cover and rest for 20 minutes.
  • Make the Filling: In a bowl, combine spinach, onion, olive oil, Aleppo pepper, salt, black pepper, and feta.
  • Shape and Fill: Roll the dough into thin circles. Add the filling to the center and fold the dough over to seal.
  • Cook: Heat a skillet over medium heat. Cook the filled dough for 2-3 minutes on each side until golden and crispy.
  • Serve: Allow to cool slightly before serving.

Notes

  • Other Fillings: Experiment with mashed potatoes, minced meat, or cheese for different flavors.
