Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

For the Filling:

  • 1/2 cup sugar
  • 1/2 cup ground cinnamon
  • 2 tablespoons butter, melted

For Frying:

  • Oil for frying (vegetable or canola)

Instructions

Step 1: Prepare the Dough

  • In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  • Add the cold cubed butter and use a pastry cutter or your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
  • Stir in milk and vanilla extract until the dough forms a ball. Be careful not to overwork the dough.

Step 2: Roll & Fill the Dough

  • On a floured surface, roll the dough out to about 1/4 inch thickness.
  • In a small bowl, mix sugar, cinnamon, and melted butter for the filling.
  • Spread the cinnamon-sugar filling over the rolled dough, leaving a small border around the edges.
  • Roll the dough into a log shape, then cut it into 1-inch slices.

Step 3: Fry the Blarney Stones

  • Heat oil in a deep pan or skillet over medium heat.
  • Fry the dough slices, turning occasionally, until golden brown and crispy on both sides (about 2-3 minutes per side).
  • Remove the Blarney Stones from the oil and drain them on paper towels.

Step 4: Serve

  • Let the Blarney Stones cool slightly before serving.
  • Optionally, dust with powdered sugar for an extra touch.

Notes

Nutty Version: Add chopped walnuts or pecans to the cinnamon-sugar filling for a nutty crunch.
Fruit Filling: Try fruit jam or preserves like strawberry or raspberry for a fruity twist.
Icing Drizzle: Drizzle a simple glaze made from powdered sugar and milk on top for extra sweetness.
