Grasshopper Cheesecake is a rich and creamy dessert inspired by the classic Grasshopper cocktail, featuring a luscious mint-flavored filling over a chocolate cookie crust. With a refreshing minty taste and decadent chocolate pairing, this elegant cheesecake is perfect for St. Patrick’s Day, holiday celebrations, or any special occasion!

Ingredients

For the Crust:

  • 1 ½ cups chocolate cookie crumbs (such as Oreos)
  • ¼ cup unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup heavy cream
  • ¼ cup crème de menthe liqueur
  • 2 tbsp crème de cacao liqueur
  • ½ tsp vanilla extract
  • Green food coloring (optional)

For Garnish (Optional):

  • Whipped cream
  • Chocolate shavings or chocolate drizzle
  • Mint leaves

Instructions

  • Prepare the Crust:

    • Preheat the oven to 325°F (163°C).
    • Mix the chocolate cookie crumbs with melted butter until well combined.
    • Press the mixture firmly into the bottom of a 9-inch springform pan.
    • Bake for 8-10 minutes, then let cool while preparing the filling.
  • Make the Cheesecake Filling:

    • In a large bowl, beat the softened cream cheese until smooth.
    • Gradually add sugar and mix until fully incorporated.
    • Add eggs one at a time, beating after each addition.
    • Mix in heavy cream, crème de menthe, crème de cacao, and vanilla extract.
    • If using, add a few drops of green food coloring for a vibrant minty hue.
    • Pour the filling over the cooled crust, smoothing the top.
  • Bake the Cheesecake:

    • Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
    • Turn off the oven, crack the door open, and allow the cheesecake to cool gradually for 1 hour.
    • Transfer to the refrigerator and chill for at least 4 hours or overnight.
  • Garnish & Serve:

    • Before serving, garnish with whipped cream, chocolate shavings, or a drizzle of chocolate sauce.
