Ingredients

  • 1 fresh pineapple, peeled and cut into ¾1 inch spears or rings
  • ¼ cup melted butter (or coconut oil for a dairy-free option)
  • ¼ cup dark brown sugar
  • 1 tablespoon dark rum (optional)
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  • Prepare the Pineapple

    • Cut off the top and bottom of the pineapple, remove the rind, and slice it into spears or rings.
    • If using rings, remove the core with a small cutter.
  • Make the Marinade

    • In a small bowl, whisk together melted butter, brown sugar, rum (if using), cinnamon, and salt until combined.
  • Marinate the Pineapple

    • Place pineapple pieces in a large zip-top bag or bowl.
