Ingredients

For the Beef and Rice Skillet:

  • 1 lb ground beef
  • 1 cup long-grain white rice (uncooked)
  • 2 cups beef broth or water

  • 1 teaspoon cumin

  • 1 can (14.5 oz) diced tomatoes (optional)
  • ½ cup frozen peas or corn (optional)
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  • Cook the Beef:
    In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked. Drain any excess fat.
  • Sauté the Vegetables:
    Add the diced onion and minced garlic to the skillet with the beef. Cook for 3-4 minutes until softened and fragrant.
  • Add the Rice and Spices:
    Stir in the rice, paprika, cumin, chili powder (if using), salt, and pepper. Cook for 1-2 minutes to lightly toast the rice and spices.
  • Add Liquid:
    Pour in the beef broth (or water) and bring to a boil. If using, add the diced tomatoes and frozen peas or corn. Stir to combine.
  • Simmer the Rice:
    Reduce the heat to low and cover the skillet. Simmer for 15-20 minutes, or until the rice is fully cooked and has absorbed most of the liquid.
  • Finish and Serve:
    Remove the skillet from the heat and let it sit for 5 minutes before fluffing the rice with a fork. Garnish with fresh cilantro or parsley if desired. Serve hot.
