Hamburger Noodle Soup with Tomatoes and Parmesan is a hearty, family-friendly dish combining tender noodles, savory ground beef, and tangy tomatoes. Perfect for cozy dinners, this easy-to-make soup is topped with Parmesan cheese for a comforting, flavor-packed meal.

 

Ingredients

  • 2 cups egg noodles (or any sturdy pasta)
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, diced
  • 1 cup sliced celery
  • 1 cup sliced carrots
  • 2 cloves garlic, minced
  • 1 pound lean ground beef
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • ½ teaspoon seasoned salt
  • Salt and pepper, to taste
  • 1 envelope dry onion soup mix
  • 3 cups beef broth
  • 1 (28-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 tablespoon soy sauce
  • ¼ cup grated Parmesan cheese

Instructions

  • Cook the Noodles: Boil salted water, cook egg noodles until al dente, then drain and set aside.
  • Sauté Vegetables: In a large soup pot, heat olive oil over medium heat. Add onion, celery, and carrots. Cook until softened, then add garlic and sauté briefly.
  • Brown the Beef: Add ground beef, cooking until browned and breaking it apart as it cooks. Drain any excess fat.
  • Add Seasonings: Stir in oregano, basil, seasoned salt, salt, and pepper. Cook for 30 seconds to release flavors.
  • Add Broth and Tomatoes: Stir in onion soup mix, beef broth, diced tomatoes, tomato sauce, and soy sauce. Bring to a boil, then reduce to a simmer for 15 minutes.
  • Combine Noodles and Serve: Stir cooked noodles into the soup. Heat for 5 minutes. Serve hot, topped with Parmesan cheese.
