This Hawaiian Garlic Shrimp Scampi combines the classic flavors of shrimp scampi with a tropical twist of fresh pineapple and a garlic butter sauce. Quick and easy to make, it’s perfect for a light dinner or a fun island-inspired meal.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 6 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup dry white wine
  • 1 tablespoon lemon juice
  • 1/2 cup pineapple chunks
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  • Cook the Shrimp:

    • Heat olive oil and butter in a large skillet over medium-high heat.
    • Add garlic and sauté for 1 minute until fragrant.
    • Stir in shrimp and cook until they turn pink, about 2-3 minutes per side.
  • Make the Sauce:

    • Add red pepper flakes (if using), white wine, and lemon juice.
    • Stir to combine and cook for an additional 2-3 minutes, allowing the sauce to reduce slightly.
  • Add Pineapple:

    • Gently fold in pineapple chunks and cook for another minute until heated through.
  • Serve:

    • Garnish with fresh cilantro, season with salt and pepper to taste, and serve immediately.

Notes

  • Vegetable Additions: Add bell peppers, zucchini, or spinach for extra flavor and nutrients.
  • Tropical Flavor: Substitute olive oil with coconut oil for a richer, tropical taste.
  • Spicy Kick: Adjust the heat level by adding more red pepper flakes or chili sauce.
