Ingredients

  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil, melted

Optional Add-Ins:

  • ¼ cup chopped walnuts or pecans

Instructions

Prepare the Dough:

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together oats, flour, cinnamon, nutmeg, baking soda, and salt.
  • In a separate bowl, whisk together the egg, honey (or maple syrup), applesauce, vanilla extract, and melted coconut oil.

2. Combine & Fold in Apples:

  • Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  • Gently fold in the diced apples and nuts or chocolate chips (if using).

3. Bake the Cookies:

  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten slightly with the back of a spoon.
  • Bake for 10–12 minutes, or until the cookies are golden brown and set.

4. Cool & Serve:

  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
