Ingredients

For the Grilled Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp dried oregano
  • 2 garlic cloves, minced
  • Salt and pepper, to taste

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1 cucumber, grated (excess water squeezed out)
  • 1 tbsp lemon juice
  • 1 tsp garlic, minced
  • 1 tbsp fresh dill, chopped
  • Salt and pepper, to taste

For the Salad Base:

  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • ½ cup Kalamata olives

Optional Garnishes:

  • Feta cheese
  • Fresh herbs (parsley or mint)
  • Lemon wedges

Instructions

  • Marinate the Chicken:
    • In a bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
    • Coat chicken breasts with the marinade, cover, and refrigerate for at least 15 minutes.
  • Grill the Chicken:
    • Preheat a grill or grill pan over medium-high heat.
    • Cook chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C).
    • Let the chicken rest for 5 minutes before slicing.
  • Prepare the Tzatziki Sauce:
    • In a bowl, mix Greek yogurt, grated cucumber, lemon juice, minced garlic, chopped dill, salt, and pepper.
    • Refrigerate for 10-15 minutes to let the flavors meld.
  • Assemble the Bowls:
    • In serving bowls, arrange a base of mixed greens.
    • Top with cherry tomatoes, red onion, cucumber, avocado, and Kalamata olives.
    • Add sliced grilled chicken and drizzle with tzatziki sauce.
    • Garnish with feta, fresh herbs, or a squeeze of lemon juice, if desired.

  • To make it dairy-free, substitute the yogurt with a plant-based alternative and skip the feta cheese.
