Ingredients

  • 2 cups rolled oats
  • 1/2 cup almond butter (or peanut butter)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup raisins or dried cranberries
  • 1/4 cup chopped nuts (almonds, walnuts, or pecans)
  • 1/4 cup chia seeds or flaxseeds
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons water (if needed)

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix Wet Ingredients: In a large bowl, combine almond butter, applesauce, and vanilla extract. Stir until smooth and well combined.
  • Combine Dry Ingredients: In a separate bowl, mix rolled oats, raisins, nuts, chia seeds, cinnamon, and salt.
  • Combine Wet and Dry Mixtures: Add the dry ingredients to the wet mixture and stir until evenly mixed. If the dough is too thick, add 1-2 tablespoons of water to help bind the ingredients together.
  • Shape the Cookies: Scoop out tablespoon-sized portions of the dough and shape them into balls or press them flat into cookie shapes on the baking sheet.
  • Bake: Bake for 10-12 minutes, or until the edges of the cookies are slightly golden.
  • Cool: Remove from the oven and let the cookies cool completely on a wire rack.

Notes

  • Nut Butter Options: You can swap almond butter for peanut butter or cashew butter based on your preference.
  • Add-ins: For variety, add dark chocolate chips, shredded coconut, or sunflower seeds.
  • Sweetness Adjustment: If you prefer a sweeter cookie, add a tablespoon of honey or maple syrup, though it will add a bit of sugar.
