Homemade Fudge Rounds are a soft, chewy chocolate cookie sandwich filled with creamy fudge frosting and drizzled with rich chocolate. Inspired by the classic Little Debbie treat, these nostalgic cookies are even better than store-bought! Perfect for chocolate lovers, these homemade fudge rounds are a fun and indulgent dessert.

Ingredients

For the Chocolate Cookies:

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup whole milk

For the Fudge Filling:

  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract

For the Chocolate Drizzle:

  • ½ cup semisweet chocolate chips
  • 1 teaspoon vegetable oil

Instructions

  • Make the Chocolate Cookies:

    • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
    • In a large bowl, beat butter and sugar until light and fluffy.
    • Add eggs and vanilla, mixing until combined.
    • In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
    • Gradually mix dry ingredients into the wet ingredients, adding milk as needed.
    • Scoop tablespoon-sized portions onto the baking sheets, spacing them 2 inches apart.
    • Bake for 8-10 minutes, until edges are set. Let cool completely.
  • Prepare the Fudge Filling:

    • Beat butter until creamy.
    • Add powdered sugar and cocoa powder, mixing until combined.
    • Add heavy cream and vanilla, beating until smooth and fluffy.
  • Assemble the Fudge Rounds:

    • Spread or pipe fudge filling onto the flat side of half the cookies.
    • Top with remaining cookies, pressing gently to create sandwiches.
  • Make the Chocolate Drizzle:

    • Melt chocolate chips with vegetable oil in the microwave in 30-second intervals, stirring between each.
    • Drizzle over the cookie sandwiches.
  • Serve & Enjoy:

    • Let the drizzle set before serving. Store in an airtight container.
