Ingredients

  • 2 sticks unsalted butter (1/2 lb.), softened
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup confectioner’s sugar (sifted)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour (500g)
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon salt
  • 2 cups chopped pecans
  • 1/2 cup granulated sugar (for decoration)

Instructions

  • Preheat the Oven: Preheat your oven to 325°F (165°C).
  • Mix Wet Ingredients: In a large bowl, cream together softened butter, vegetable oil, granulated sugar, and confectioner’s sugar until smooth. Beat in the eggs one at a time and stir in the vanilla extract.
  • Combine Dry Ingredients: In a separate bowl, combine flour, baking soda, cream of tartar, and salt. Gradually stir into the creamed mixture until well mixed.
  • Add Pecans: Fold in the chopped pecans to the dough.
  • Shape the Cookies: Roll the dough into 1-inch balls and then roll each ball in the remaining granulated sugar.
  • Bake the Cookies: Place the balls on ungreased cookie sheets, spaced about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden.
  • Cool: Remove from the oven and allow the cookies to cool on wire racks.
