Homemade pistachio butter is a creamy, flavorful spread made from roasted pistachios, offering a rich, earthy taste. It’s a healthier alternative to peanut or almond butter and can be used in various dishes, from toast to baked goods. Ingredients

  • 2 cups shelled pistachios (roasted and unsalted)
  • 12 tablespoons of neutral oil (such as sunflower or grapeseed oil) – optional for creaminess
  • 1/2 teaspoon vanilla extract (optional for added flavor)
  • 1/4 teaspoon salt (optional, depending on your preference for saltiness)
  • 1 tablespoon honey or maple syrup (optional for sweetness)

Instructions

  • Prepare the pistachios: If using raw pistachios, roast them at 350°F (175°C) for 8-10 minutes until slightly golden and fragrant. Let cool before proceeding. If using pre-roasted pistachios, skip this step.
  • Blend the pistachios: Place cooled pistachios into a food processor or high-powered blender. Process for 5-10 minutes, pausing to scrape down the sides. Initially, the mixture will be crumbly, but it will turn into a smooth paste as the oils are released.
  • Adjust consistency: For creamier butter, add 1-2 tablespoons of neutral oil and blend until desired smoothness is achieved. Add a little water if needed.
  • Add flavor: Once smooth, mix in vanilla extract, salt, and honey (if using). Blend until fully combined.
  • Store: Transfer to an airtight jar or container. Refrigerate for up to 2-3 weeks.

Notes

  • Sweet Version: Add more honey or maple syrup for a sweeter spread. You can also sprinkle in cinnamon or cardamom for extra warmth.
  • Spicy Version: Add a pinch of cayenne or chili flakes for a spiced pistachio butter.
  • Chocolate Version: Stir in cocoa powder and a bit of sweetener for a chocolate twist.
  • Coconut Version: Add unsweetened shredded coconut for a tropical flavor.
