Ingredients

For the dough:

  • 2 1/4 teaspoons active dry yeast (1 packet)

  • 1 cup warm water (110°F / 45°C)

  • 1 teaspoon sugar

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon salt

  • 1 tablespoon olive oil

For the filling:

  • 1 cup shredded mozzarella cheese

  • 1/2 cup pepperoni slices, diced (or your favorite pizza topping)

  • 1/4 cup pizza sauce (plus more for dipping)

  • 1 teaspoon dried oregano (optional)

  • 1/2 teaspoon garlic powder (optional)

For brushing:

  • 1 tablespoon olive oil (or melted butter)

  • 1 tablespoon grated Parmesan cheese (optional)

Instructions

  • Prepare the Dough:

    • In a small bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy.

    • In a large bowl, mix flour and salt. Add the yeast mixture and olive oil, stirring to form dough.

    • Knead on a floured surface for 5-7 minutes until smooth and elastic. Let rise in a greased bowl for 1 hour, or until doubled in size.

  • Prepare the Filling:

    • While the dough rises, shred mozzarella, chop pepperoni (or other toppings), and prepare pizza sauce. Add oregano and garlic powder for extra flavor.

  • Shape the Pizza Pockets:

    • Punch down the dough and divide it into 8 portions.

    • Roll each portion into a 4-5 inch circle. Place a spoonful of pizza sauce in the center, followed by cheese, pepperoni, and other toppings.

    • Fold the dough over the filling to create a half-moon shape, pinching the edges and crimping with a fork.

  • Prepare for Baking:

    • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

    • Place the pizza pockets on the sheet. Brush with olive oil or melted butter and sprinkle with Parmesan cheese.

  • Bake the Pizza Pockets:

    • Bake for 15-20 minutes until golden brown. Let cool for a few minutes before serving.
