Ingredients

  • 2 cups powdered sugar
  • 1 1/2 cups creamy peanut butter
  • 4 tbsp unsalted butter, softened
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 2 cups semi-sweet chocolate chips or chopped chocolate
  • 2 tbsp coconut oil or vegetable shortening (optional)

Instructions

  • Make the Peanut Butter Filling: In a mixing bowl, combine peanut butter, softened butter, powdered sugar, vanilla extract, and salt. Mix until smooth and thick enough to mold.
  • Shape the Eggs: Roll small portions of the peanut butter mixture into balls, then press into egg shapes. Place them on a parchment-lined baking sheet and refrigerate for 30 minutes.
  • Coat in Chocolate: Melt the chocolate chips and coconut oil (if using) in a microwave-safe bowl. Dip each peanut butter egg into the melted chocolate and return to the baking sheet.
  • Chill & Set: Refrigerate the eggs for 30-45 minutes, until the chocolate coating is firm.
  • Serve & Enjoy: Serve immediately, or store in an airtight container in the refrigerator for up to 1 week. You can also freeze them for longer storage.

Notes

  • Use milk chocolate for a sweeter coating or crunchy peanut butter for added texture.
  • Vegan version: Use vegan butter and dairy-free chocolate for a plant-based option.
