Ingredients

For the Shortbread Crust:

  • ¾ cup chopped walnuts
  • ½ cup honey
  • ¼ cup unsalted butter
  • ½ cup brown sugar (light or dark)
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest

Instructions

  • Prepare the Shortbread Crust: Preheat the oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper. Mix flour, powdered sugar, and butter until a dough forms. Press it into the pan and bake for 15 minutes until lightly golden. Set aside.
  • Make the Filling: In a saucepan, combine honey, butter, and brown sugar. Cook over medium heat until bubbling (about 3-5 minutes). Stir in heavy cream, vanilla extract, and lemon zest.
  • Add the Walnuts: Mix in the chopped walnuts, then pour the filling over the pre-baked crust.
  • Bake Again: Return to the oven and bake for 20-25 minutes, or until the top is golden and bubbly.
  • Cool and Cut: Allow the bars to cool completely before slicing into squares.
