Impossible Apple Pie is a crustless dessert that magically forms a cake-like base as it bakes. Packed with tender apple slices and warm cinnamon flavors, this easy-to-make pie is perfect for any occasion—no rolling or crust required!

Ingredients

  • For the Apples:

    • 6 apples (Granny Smith, Honeycrisp, or Fuji)
  • For the Batter:

    • ¾ cup granulated sugar
    • 4 large eggs
    • ¼ cup melted butter
    • 1 cup milk
    • 2 teaspoons vanilla extract
    • 1 cup all-purpose flour
    • ¼ teaspoon salt
    • 2 teaspoons baking powder
    • ½ teaspoon cinnamon

Instructions

Prepare the Apples:

  1. Preheat the Oven – Set to 350°F (175°C). Grease an 8×8 or 9×9-inch baking dish.
  2. Slice the Apples – Thinly slice apples, discarding the cores.
  3. Stack Apples in Dish – Tilt the dish on its side and layer apple slices until full, then lay the dish flat again.

Make the Batter:

  1. Mix Wet Ingredients – In a bowl, whisk together sugar, eggs, melted butter, milk, and vanilla extract.
  2. Add Dry Ingredients – Stir in flour, salt, baking powder, and cinnamon, whisking until smooth.

Assemble and Bake:

  1. Pour Batter Over Apples – Ensure it seeps into all the layers.
  2. Bake for 45 Minutes – The top should be golden brown and set.

Serve:

  1. Cool for 5 Minutes – Invert onto a cutting board, then flip again onto a serving plate so the apples are on top.
