Irish Apple Cake is a traditional Irish dessert made with tender apples and a light, fluffy cake. The combination of warm spices and fresh apples makes this cake the perfect comfort dessert. Often served with custard or whipped cream, it’s perfect for family gatherings, tea time, or as a sweet ending to any meal.

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1/2 cup milk
  • 1 1/2 cups peeled, cored, and chopped apples (preferably tart apples like Granny Smith)

For the Topping:

  • 1/4 cup sugar
  • 1/2 tsp ground cinnamon

Instructions

Step 1: Preheat Oven

  • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or a springform pan.

Step 2: Mix Dry Ingredients

  • In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 3: Cut in the Butter

  • Add the cold, cubed butter to the dry ingredients and use a pastry cutter or your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.

Step 4: Add Wet Ingredients

  • In a separate bowl, whisk together eggs and milk. Pour into the flour mixture and stir until just combined.

Step 5: Fold in Apples

  • Gently fold in the chopped apples until evenly distributed throughout the batter.

Step 6: Prepare the Topping

  • In a small bowl, mix sugar and cinnamon. Sprinkle this mixture evenly over the top of the cake batter.

Step 7: Bake

  • Pour the batter into the prepared cake pan and spread evenly. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 8: Cool & Serve

  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Serve with custard, whipped cream, or a dusting of powdered sugar.

Notes

Add Raisins or Sultanas: Mix in 1/2 cup raisins or sultanas for extra sweetness and texture.
Use Brown Sugar: Substitute brown sugar for half of the white sugar for a richer flavor.
Nuts: Add chopped walnuts or pecans for a delightful crunch.
