Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup unsalted butter, cold and cubed
  • 1 cup shredded Irish cheddar cheese
  • ½ cup chopped spring onions (green onions)
  • ¾ cup buttermilk

Instructions

Prepare the Dough:

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, baking powder, baking soda, salt, and black pepper.
  • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Stir in shredded Irish cheddar and chopped spring onions.

2️⃣ Form the Biscuits:

  • Gradually add buttermilk, stirring until just combined.
  • Turn the dough onto a floured surface and gently knead a few times.
  • Roll or pat dough to ¾-inch thickness and cut into rounds using a biscuit cutter.

3️⃣ Bake the Biscuits:

  • Place biscuits on the prepared baking sheet, leaving space between them.
  • Bake for 12-15 minutes or until golden brown.
  • Let cool slightly before serving.

Notes

  • Spicy Kick: Add a pinch of cayenne pepper to the dough for extra heat.
  • Garlic Cheddar Biscuits: Mix in ½ teaspoon of garlic powder.
  • Herb-Infused: Add fresh thyme or chives to the dough for an herbaceous flavor.
