Ingredients

For the Pasta Shells:

  • 2024 jumbo pasta shells
  • Salt (for boiling water)

For the Filling:

  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • ½ cup grated parmesan cheese
  • 2 eggs, lightly beaten
  • ¼ cup chopped fresh parsley
  • 1 lb ground Italian sausage
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper

For the Sauce:

  • 1 jar (24 oz) marinara sauce
  • ½ teaspoon red pepper flakes (optional)
  • ½ teaspoon garlic powder

Instructions

  1. Prepare the Filling
    • In a skillet over medium heat, cook the Italian sausage, breaking it into small pieces. Once fully cooked, drain excess grease.
    • In a large bowl, mix the cooked sausage with ricotta, 1 ½ cups mozzarella, parmesan, eggs, parsley, Italian seasoning, garlic powder, and black pepper. Stir until well combined.
  2. Cook the Pasta
    • Bring a large pot of salted water to a boil.
    • Add jumbo pasta shells and cook for about 3 minutes, just until softened. Drain and let cool slightly.
  3. Assemble the Dish
    • Preheat oven to 350°F (175°C).
    • Spread ¾ of the marinara sauce in an oven-safe dish. Mix in red pepper flakes and garlic powder.
    • Fill each shell generously with the ricotta mixture and place them in the marinara sauce.
    • Pour the remaining marinara over the shells and sprinkle with the remaining ½ cup of mozzarella.
  4. Bake the Shells
    • Cover the dish with foil and bake for 35-40 minutes.
    • Remove the foil for the last 5 minutes to let the cheese brown slightly.
  5. Serve & Enjoy!
    • Garnish with fresh basil or parsley and serve hot.

Notes

  • For a vegetarian version, skip the sausage and add sautéed spinach or mushrooms.
  • For a spicy kick, use hot Italian sausage and extra red pepper flakes.
  • Broil for 2-3 minutes at the end for a crispy cheese topping.
