Ingredients

For the Pretzel Dough:

  • 1 ¼ cups warm water
  • 2 ½ teaspoons active dry yeast
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 34 cups all-purpose flour
  • 2 medium jalapeños, seeded and minced
  • 2 cups shredded cheddar cheese

For the Baking Soda Bath:

  • 4 cups very hot water
  • ¼ cup baking soda

For Topping & Baking:

  • 1 egg + 2 tablespoons water (for egg wash)
  • Coarse salt, for sprinkling
  • 2 tablespoons melted butter

Instructions

  • Prepare the Dough:

    • Preheat oven to 450°F (230°C).
    • In a bowl, combine warm water, yeast, and sugar. Let sit for 5-10 minutes until foamy.
    • Stir in salt, flour, jalapeños, and cheddar cheese, adding flour gradually until a slightly tacky dough forms.
  • Shape the Pretzels:

    • Divide dough into 12 equal pieces.
    • Roll each piece into an 18-24 inch rope.
    • Fold in half, twist the segments together, and pinch the ends.
  • Baking Soda Bath:

    • Mix hot water with baking soda in a bowl.
    • Dip each pretzel twist in the solution for 30 seconds, then place on a baking sheet.
  • Bake:

    • Brush with egg wash, sprinkle with coarse salt, and bake for 8-10 minutes until golden brown.
    • Brush with melted butter before serving.

Notes

  • Add more jalapeños or use Pepper Jack cheese for a spicier version.
  • Brush with garlic butter for extra flavor.
