Ingredients

 

  • 3 cups corn kernels (fresh or frozen)
  • 2 jalapeños, finely chopped
  • 1 red bell pepper, finely diced
  • ½ red onion, finely chopped
  • ¼ cup white vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh cilantro, chopped

Instructions

  • Combine the Vegetables:
    In a large mixing bowl, combine the corn, jalapeños, red bell pepper, and red onion. Mix well.

  • Prepare the Vinegar Mixture:
    In a small saucepan, combine the white vinegar, sugar, salt, and black pepper. Bring to a simmer over medium heat, stirring until the sugar dissolves completely.

  • Combine and Mix:
    Pour the vinegar mixture over the corn mixture and stir until well combined.

  • Cool and Refrigerate:
    Allow the relish to cool to room temperature. Once cooled, stir in the fresh cilantro.

  • Chill:
    Cover and refrigerate for at least 2 hours, or overnight, to allow the flavors to meld.

  • Serve:
    Enjoy the relish cold as a topping or side dish!
