Ingredients

For the Chicken:

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper, thinly sliced
  • 2 yellow peaches, pitted and sliced

For the Peach Glaze:

  • ½ cup peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon minced garlic
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Instructions

Prepare the Peach Glaze:

  1. In a bowl, whisk together peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes. Set aside.

Season the Chicken:

  1. Pat chicken thighs dry with paper towels.
  2. In a small bowl, mix salt, black pepper, and chili powder. Sprinkle evenly over both sides of the chicken.

Cook the Chicken:

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat.
  2. Add the seasoned chicken thighs and cook for 5 minutes on one side until golden brown.
  3. Flip, reduce heat to medium-low, and cook for another 5 minutes, or until the internal temperature reaches 165°F (74°C).
  4. Remove chicken from the skillet, tent with foil, and set aside.

Prepare the Peach and Jalapeno Mixture:

  1. In the same skillet, add sliced jalapenos and peaches.
  2. Sauté for 2-3 minutes until peaches soften slightly and jalapenos become fragrant.

Combine and Glaze:

  1. Return the cooked chicken to the skillet, nestling it among the peaches and jalapenos.
  2. Pour the peach glaze over the chicken and fruit.
  3. Simmer for 2-3 minutes, allowing the glaze to thicken slightly and coat the chicken evenly.

Serve:

  1. Remove from heat and serve hot, garnished with extra peach slices or jalapeno rings if desired.
