Ingredients

For the Cookies:

  • 1 box white cake mix
  • 2 eggs, whisked
  • 1/3 cup butter, melted

For the Glaze:

  • 1/4 cup butter
  • 1/2 cup granulated sugar
  • 1 tbsp water
  • 1 tsp vanilla

Instructions

For the Cookies:

  1. Preheat Oven: Set to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the Dough: In a large bowl, combine the cake mix, whisked eggs, and melted butter. Stir until fully incorporated (the dough will be thick).
  3. Shape the Cookies: Scoop dough onto the prepared baking sheet using a medium cookie scoop or heaping tablespoon.
  4. Bake: Bake for 7-8 minutes, or until the edges are lightly golden.
  5. Cool: Allow cookies to cool on the sheet for 4-5 minutes before transferring to a wire rack.

For the Glaze:
6. Prepare the Glaze: In a small saucepan, combine butter, sugar, water, and vanilla.
7. Cook the Glaze: Heat over medium-low, whisking constantly, until the sugar dissolves (about 4 minutes).
8. Glaze the Cookies: Spoon about a teaspoon of glaze over each warm cookie, spreading if needed.
9. Set and Serve: Allow the glaze to set before serving. Optionally, dust with powdered sugar.

Notes

  • Chocolate Twist: Use chocolate cake mix and add chocolate chips.
  • Lemon Zest Delight: Add 1 tbsp of lemon zest and use lemon extract in the glaze.
  • Nutty Crunch: Mix in ½ cup of chopped pecans or walnuts.
