Ingredients

For the Truffle Filling:

  • 4 ounces cream cheese, softened
  • ¼ cup fresh key lime juice (or substitute regular lime juice)
  • 1 teaspoon key lime zest (plus extra for garnish)
  • 2 tablespoons sweetened condensed milk
  • 1 cup graham cracker crumbs

For the White Chocolate Coating:

  • 12 ounces white chocolate chips (or almond bark/candy melts)
  • 1 teaspoon coconut oil or shortening (for a smoother coating, optional)
  • Optional Garnish: Extra lime zest, crushed graham crackers, or toasted coconut

Instructions

Prepare the Truffle Mixture:

  • In a microwave-safe bowl, soften cream cheese by microwaving for 15-20 seconds.
  • Stir in lime zest, lime juice, and sweetened condensed milk until smooth.
  • Add graham cracker crumbs and mix until fully combined.

2. Roll & Chill:

  • Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
  • Freeze for 30 minutes until firm.

3. Melt the White Chocolate:

  • In a microwave-safe bowl, melt white chocolate chips in 30-second intervals, stirring between each until smooth.
  • Stir in coconut oil (if using) for a silkier consistency.

4. Coat the Truffles:

  • Using a fork or dipping tool, dip each truffle into the melted chocolate, allowing excess to drip off.
  • Return coated truffles to the parchment-lined tray.

5. Garnish & Set:

  • Sprinkle with extra lime zest, crushed graham crackers, or toasted coconut before the chocolate hardens.
  • Refrigerate for 10 minutes to allow the coating to set.
