These Kofta Kebabs are a delicious, Middle Eastern-inspired dish made with minced meat (beef or lamb), blended with herbs, spices, and grilled to perfection. The combination of cumin, coriander, paprika, and fresh parsley creates an incredibly flavorful kebab that’s crispy on the outside and juicy on the inside. Ingredients

  • 1 lb ground beef or lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon ground paprika
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh cilantro
  • 1 egg
  • Wooden or metal skewers

Instructions

  • Prepare the Kofta Mixture:

    • In a large mixing bowl, combine ground beef (or lamb), onion, garlic, cumin, coriander, paprika, cinnamon, salt, pepper, parsley, cilantro, and egg.
    • Mix thoroughly until all ingredients are evenly distributed.
  • Preheat the Grill or Broiler:

    • Preheat your grill or broiler to medium-high heat.
  • Shape the Kebabs:

    • Take a portion of the mixture and mold it around a skewer, pressing it into a long, -like shape.
    • Repeat with the remaining mixture.
  • Grill the Kebabs:

    • Grill the kebabs for about 4-5 minutes on each side, or until browned and fully cooked.
  • Serve:

    • Remove the skewers from the grill and let them rest for a few minutes before serving.

Notes

  • Vegetarian Option: Replace the meat with chickpeas or a mixture of vegetables for a plant-based kofta.
  • Spicy Version: Add chili flakes or fresh chopped chili peppers to the mixture for extra heat.
  • Add Vegetables: Potatoes or carrots can be added to the kofta mixture, cooking along with the meat.
