Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 tbsp kosher salt
  • 2 tbsp Korean chili powder
  • 1 tbsp sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 green onion, chopped
  • 1 tsp toasted sesame seeds

Instructions

  • Prepare the Cucumbers:
    • Place the sliced cucumbers in a colander and sprinkle with kosher salt.
    • Let them sit for about 20 minutes to draw out excess moisture.
  • Rinse and Dry:
    • After 20 minutes, rinse the cucumbers under cold water and pat them dry with a towel to remove excess moisture.

    • Stir until the sugar dissolves.
