Ingredients

For the Pudding:

  • 1 cup semolina
  • 1/2 cup sugar
  • 4 cups milk
  • 2 tablespoons unsalted butter
  • 2 teaspoons rose water
  • 1 teaspoon orange blossom water
  • 1/2 teaspoon vanilla extract

For the Syrup:

  • 1 cup sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon rose water

For Garnish:

  • Chopped pistachios or almonds
  • Rose petals (optional)

Instructions

  • Make the Syrup: In a small saucepan, combine the sugar, water, and lemon juice. Bring to a boil, then simmer for 5 minutes. Stir in the rose water and set aside to cool.
  • Prepare the Pudding: In a large saucepan, combine the semolina, sugar, and milk. Cook over medium heat, stirring constantly, until the mixture thickens and becomes smooth, about 8-10 minutes.
  • Add Flavor: Stir in the butter, rose water, orange blossom water, and vanilla extract. Continue cooking for 2-3 more minutes.
  • Assemble: Pour the pudding into serving dishes or a large tray and smooth the top with a spatula.
  • Cool and Garnish: Allow the pudding to cool to room temperature, then refrigerate for at least 2 hours to set.
  • Serve: Drizzle the cooled syrup over the pudding and garnish with chopped pistachios or almonds. Optional: Add rose petals for decoration.
