Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 tbsp lemon zest (from about 2 lemons)
- 2 tbsp lemon juice (from about 1/2 lemon)
For the Glaze:
- 1 cup powdered sugar
- 2–3 tbsp lemon juice (adjust for desired consistency)
- Additional lemon zest for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, whisk together the flour, sugar, salt, and baking powder.
- In a large bowl, cream the softened butter with an electric mixer. Add eggs one at a time, mixing well after each addition. Stir in lemon zest and lemon juice.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Pour the batter into the prepared pan, smoothing the top. Bake for 22-25 minutes, or until the edges are golden and a toothpick comes out clean or with a few moist crumbs.
- Prepare the glaze by whisking together powdered sugar and lemon juice until smooth. Adjust for desired consistency.
- Once cooled, pour the glaze over the brownies and spread evenly. Garnish with additional zest, if desired.
- Let the glaze set before cutting the brownies into squares and serving.
Notes
- For a gluten-free version, use a 1:1 gluten-free flour blend.
- To make it vegan, substitute with vegan butter and flax eggs.
