These zesty lemon brownies combine the chewy, rich texture of a brownie with a refreshing citrus punch. Topped with a sweet lemon glaze, these lemonies are perfect for any occasion. Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tbsp lemon zest (from about 2 lemons)
  • 2 tbsp lemon juice (from about 1/2 lemon)

For the Glaze:

  • 1 cup powdered sugar
  • 23 tbsp lemon juice (adjust for desired consistency)
  • Additional lemon zest for garnish (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  • In a medium bowl, whisk together the flour, sugar, salt, and baking powder.
  • In a large bowl, cream the softened butter with an electric mixer. Add eggs one at a time, mixing well after each addition. Stir in lemon zest and lemon juice.
  • Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  • Pour the batter into the prepared pan, smoothing the top. Bake for 22-25 minutes, or until the edges are golden and a toothpick comes out clean or with a few moist crumbs.
  • Prepare the glaze by whisking together powdered sugar and lemon juice until smooth. Adjust for desired consistency.
  • Once cooled, pour the glaze over the brownies and spread evenly. Garnish with additional zest, if desired.
  • Let the glaze set before cutting the brownies into squares and serving.

Notes

  • For a gluten-free version, use a 1:1 gluten-free flour blend.
  • To make it vegan, substitute with vegan butter and flax eggs.
  • Feel free to add poppy seeds or berries for a twist!
  • If you want to boost the lemon flavor, increase lemon zest in the batter.
