Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 egg
  • 1 tsp garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 cup parmesan cheese, grated
  • ½ cup flour
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • ¼ cup fresh lemon juice
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • Lemon slices, for garnish

Instructions

  • Prepare the Chicken: Cut each chicken breast in half lengthwise and flatten with a meat mallet. Whisk together the egg, garlic, Italian seasoning, salt, and pepper in one bowl. In a separate bowl, mix the parmesan and flour. Dredge each chicken breast first in the egg mixture, then coat with the parmesan mixture.
  • Cook the Chicken: Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side until golden brown and the internal temperature reaches 165°F (75°C).
  • Make the Lemon Butter Sauce: While the chicken is cooking, melt butter in a separate pan and sauté garlic until fragrant. Add lemon juice, chicken broth, Italian seasoning, and pepper. Simmer for about 2 minutes until the sauce slightly thickens.
  • Combine and Serve: Once the chicken is done, pour the lemon butter sauce over the chicken breasts. Garnish with lemon slices and serve.

Notes

  • No Parmesan Option: Omit the parmesan crust for a healthier version.
  • Vegetable Add-ins: Add veggies like asparagus or zucchini to the skillet while cooking the chicken for a complete meal.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
