These Lemon Garlic Chicken Bites are juicy, flavorful, and ready in under 30 minutes! Perfect for weeknight dinners, meal prep, or appetizers, these bite-sized chicken pieces are sautéed in buttery garlic and fresh lemon juice, creating a dish that’s both healthy and delicious.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • 2 tablespoons fresh parsley, finely chopped
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons minced garlic
  • Juice of ½ medium lemon (about 2 tablespoons)

Instructions

Season the Chicken:

  • In a small bowl, mix oregano, basil, parsley, salt, and pepper.
  • Toss chicken pieces with the seasoning blend until well coated.

2. Sauté the Chicken:

  • Heat 2 tablespoons butter in a 12-inch skillet over medium heat.
  • Add seasoned chicken in a single layer. Avoid overcrowding.
  • Cook for 8-10 minutes, flipping halfway, until golden brown and mostly cooked through.

3. Add Garlic & Finish Cooking:

  • Add the remaining 2 tablespoons butter to the skillet.
  • Stir in minced garlic and cook for 1 minute, until fragrant.
  • Ensure the chicken reaches an internal temp of 165°F (74°C).

4. Add Lemon Juice & Serve:

  • Drizzle lemon juice over the chicken. Stir to coat evenly.
  • Remove from heat and serve immediately!

 

Notes

  • Use chicken thighs for a juicier option. Adjust cooking time as needed.
  • Fresh herbs vs. dried: Fresh herbs provide the best flavor, but dried herbs can be substituted (use half the amount).
