Indulge in a refreshing and elegant treat with this Citrus Dream: Tangy Lemon Mousse with Zesty Raspberry Compote. Ingredients

  • Lemons (juice and zest)
  • Fresh raspberries
  • Sugar
  • Gelatin
  • Heavy whipping cream
  • Fresh mint leaves (for garnish)

Instructions

  • Prepare the Lemon Mousse:
    • Extract fresh lemon juice and zest from the lemons.
    • Combine lemon juice, zest, sugar, and gelatin in a saucepan. Heat gently until the gelatin dissolves completely, then let it cool to room temperature.
    • Whip heavy cream until soft peaks form. Fold the whipped cream into the cooled lemon mixture until well-incorporated.
    • Spoon or pipe the mousse into serving glasses, filling them two-thirds full. Refrigerate for at least 2 hours to set.
  • Prepare the Raspberry Compote:
    • Cook raspberries and sugar over medium heat until the raspberries break down and the mixture thickens slightly.
    • Remove from heat and let it cool completely.
  • Assemble the Dessert:
    • Once the mousse has set, add a layer of cooled raspberry compote on top.
    • Garnish with lemon zest swirls and fresh mint leaves.
    • Serve chilled and enjoy!

  • Use agar-agar as a vegetarian alternative to gelatin.
