Juicy chicken breasts are marinated, seared, and topped with a creamy Parmesan-ranch spread, melted provolone cheese, and a golden panko-Parmesan crust. Perfect for family dinners or special occasions, this dish is kid-friendly and customizable.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup Italian salad dressing (for marinating)
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese, divided
  • 1/2 cup ranch dressing
  • 4 slices provolone cheese
  • 1/4 cup salted butter, melted
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Marinate the Chicken: Pound chicken breasts to ½ inch thickness and marinate in Italian dressing for at least 30 minutes or overnight.
  2. Sear the Chicken: Heat olive oil in a skillet, remove chicken from marinade, and sear for 5 minutes per side or until fully cooked.
  3. Make the Parmesan-Ranch Spread: Combine ¼ cup Parmesan cheese and ranch dressing in a bowl. Spread this mixture over the seared chicken and top with provolone cheese slices.
  4. Broil: Transfer chicken to an oven-safe dish and broil on low for 3-5 minutes, until cheese melts.
  5. Prepare the Parmesan Crumb Topping: Mix butter, panko breadcrumbs, remaining Parmesan cheese, garlic powder, salt, and pepper. Sprinkle this mixture on the chicken.
  6. Broil Again: Broil for another 2-3 minutes until the topping is golden brown.
  7. Serve: Let rest for a few minutes before serving. Garnish with parsley if desired.

Notes

  • Marinate overnight for enhanced flavor.
  • Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C).
  • Experiment with herbs or different cheeses to customize the recipe.
